Fold hyrax-iiif-av gem into Hyrax core

With hyku including this hyrax plugin gem as a dependency I think it makes sense to fold the valuable pieces (IIIF prezi 3 manifest generation for AV content, choosing different IIIF viewer for AV content, etc.) of the gem into Hyrax core for all to benefit from.

Ruby 3.3 and Rails 7.1 were released near the end of 2023 so we should ensure that all core components work with these new versions.

Hyrax 2.9.8 → 3.6 Upgrade Path

Many of us are bridging that 2.x to 3.x gab with our institutional applications. We have some notes around getting to 3.0 (and some of that is broke), but don’t have alot for going from 3.0 → 3.6. Since 3.6 doesn’t have analytics, we should have some documentation around analytics hiding or removing.
